Baklava Ice-cream Sandwich

A super easy, delicious dessert – you can pop together in only a few steps!

For best results, make sure your fillo is cool before you stack your sandwich!


  • 1 pack Fillo pastry
  • 1/2 cup Crushed pistachios
  • 1/2 cup Unsalted cashews crushed
  • 1/2 cup Walnuts
  • 2 litres Vanilla Icecream
  • 150 grams Melted butter
  • 1 tsp Vanilla bean paste
  • Syrup 1 Cinamon stick, a few cloves, 2 cups of water, 2 cups of castor sugar & a few drops of rose water!


  • Soften ice cream in a bowl, until malleable.

    Add crushed nuts, vanilla bean paste, and a tablespoon of ground cinnamon.

    Combine ingredients well, and place back into the container and then into the freezer.

  • Divide fillo pastry into stacks of 8 sheets high. Cut into 10cm or so, squares.

    Brush liberally with clarified butter, and place onto a baking tray.

    Pop into the oven at 180°C until golden brown, for approximately 20 minutes.

  • Syrup: Place sugar, water, cinnamon stick, cloves and rose water into a pot and bring to the boil.
    Reduce by 1/2 until it becomes a thick syrup-like consistency and set aside to cool.

  • Once fillo is out of the oven, pour syrup over the top and set-aside. Once fillo has cooled, and covered in syrup – place one piece of the fillo onto your serving plate. Scoop some ice-cream, and pop another piece of fillo on top. Garnish with honey, crushed nuts, and you’re on your way!
