Vegan Bircher Muesli
Jam packed full of goodness & nutrients, this muesli will kick start your day, the right way!

COOK TIME: No Cooking!

HOT TIP
For best results, leave in the fridge to soak up all the goodness overnight!
INGREDIENTS
- 400ml Coconut milk
- 200ml Coconut cream
- 500ml Coconut yoghurt
- 1/2 cup Toasted, shaved Coconut
- 1/4 cup Sunflower seeds
- 1/4 cup Pumpkin seeds
- 1/4 cup Walnuts
- 1/4 cup Chopped whole almonds
- 1/4 cup Dried currants
- 1/4 cup Dried apricots
- 1/4 cup Dried mangoes
- 2 1/4 cups Rolled oats
- 1 tsp Ground cardamom
- Juice of 4 Green Apples
- A little Maple Syrup - to taste!
METHOD

Chop all dried ingredients, other than the oats.
Combine everything together in a large mixing bowl.
Cover with cling film, and set aside in the fridge overnight.Next day, place desired amount into a bowl.
Finish with fresh fruit of your choice, some extra maple syrup if you like, and enjoy!
