Vegan Bircher Muesli

Jam packed full of goodness & nutrients, this muesli will kick start your day, the right way!

SERVES: 6

COOK TIME: No Cooking!

PREP TIME: 30 min

HOT TIP

For best results, leave in the fridge to soak up all the goodness overnight!

INGREDIENTS

  • 400ml Coconut milk
  • 200ml Coconut cream
  • 500ml Coconut yoghurt
  • 1/2 cup Toasted, shaved Coconut
  • 1/4 cup Sunflower seeds
  • 1/4 cup Pumpkin seeds
  • 1/4 cup Walnuts
  • 1/4 cup Chopped whole almonds
  • 1/4 cup Dried currants
  • 1/4 cup Dried apricots
  • 1/4 cup Dried mangoes
  • 2 1/4 cups Rolled oats
  • 1 tsp Ground cardamom
  • Juice of 4 Green Apples
  • A little Maple Syrup - to taste!

METHOD

  • Chop all dried ingredients, other than the oats.
    Combine everything together in a large mixing bowl.
    Cover with cling film, and set aside in the fridge overnight.

    Next day, place desired amount into a bowl.
    Finish with fresh fruit of your choice, some extra maple syrup if you like, and enjoy!
